Ingredients:

1. 4 cups chicken or vegetable broth
2. 1 lemongrass stalk, bruised
3. 3-4 kaffir lime leaves
4. 1-2 red chilies, sliced
5. 1 cup mushrooms, sliced
6. 1 cup cooked chicken or shrimp (optional)
7. 2 tablespoons fish sauce
8. 1 tablespoon lime juice
9. Fresh cilantro leaves, chopped (for garnish)

Instructions:

1. In a pot, bring the chicken or vegetable broth to a simmer over medium heat.
2. Add the lemongrass stalk, kaffir lime leaves, and red chilies to the broth. Let it simmer for about 5 minutes to infuse the flavors.
3. Add the sliced mushrooms and cooked chicken or shrimp (if using) to the pot.
